Through her meal-delivery service, cookbook and London delis she has succeeded, proving that eating well needn’t mean flavour-free diets. Breakfast: Pecan granola
500g (10 servings)
- 400g porridge oats
- 50ml rice milk
- 1 tbsp coconut oil, melted
- 1 tbsp honey
- 100g pecans, roasted
- handful of berries and 2 tbsp coconut yogurt, to serve
Preheat the oven to 180C/gas mark 4. Line a baking tray with baking paper.
Mix the oats, milk, coconut oil and honey together, creating little clumps.
Spread on to the tray and bake for 15-20 minutes. Leave to cool, then combine with the pecans.
